Phulori

Phulori is an evening snack which is served with tomato chutney mostly in eastern part of India. Phulori is a favorite evening snack in Bihar and one of the popular street food. These snacks are found in every nook and corner of towns in Bihar. It is a stomach filling food and its price is low so popular among all group of people. It is not a regular evening snack prepared but yes it is prepared occasionally in my home. Health conscious people usually avoid this snack as the oil content is high.

Recipe

Preparation time: 30 minutes

Cooking time: 20 minutes

Ingredients

1cup Yellow Split peas (Chana Dal)

1/4 cup black lentil (Dhula hua Urad dal)

Salt - 1/2 tablespoon

Baking powder - 1/2 tablespoon

Green chilli - 2-3 pieces (chopped)

Kala zeera (onion seeds) - 1/2 tablespoon

50 gram spinach (पालक)

Oil for frying

 

Method:

  1. Soak Yellow Split peas and black lentil separately overnight or at least (6 hours)
  2. Grind the soaked Split peas and black lentil so that the consistency of mixture remain thick.
  3. Add required salt baking powder and whisk the mixture. Add little amount of water in order to make the batter suitable for a lump. Keep the batter aside for 15 minutes so that the baking powder soften the batter.
  4. Add kala zeera and chopped spinach and mix it properly.
  5. Now heat oil in a heavy bottomed pan and drop batter with your hand. Drop the batter in such a way that it become more or less round shape. Ensure that the heat of the oil is not high else the Phulori will remain uncooked.
  6. Fry the Phulori till become light brown.

Remove the Phulori in an Oil-absorbing Cooking Paper and serve with Tomato sauce or with tomato coriander Chutney.
